Hot & Sour Salad of Squid & Pork

A fragrant salad of roasted crispy pork and poached squid tossed through hot and sour herbs and splashed with a spicy lime dressing

Serves 2

For the dressing:

  • 80ml fresh lime juice
  • 1 tsp roasted Thai chilli powder
  • 2 green chillies, finely sliced
  • 20ml fish sauce
  • 1 tsp roasted rice

For the salad:

  • 200 g roasted pork belly
  • 100g blanched squid or cuttlefish, thinly sliced
  • 1 spring onion, sliced on a diagonal
  • 1 red eschalot, sliced
  • 5g coriander leaves
  • 5g round mint leaves
  • 5g Vietnamese mint
  • 2 tsp roasted rice
  1. Mix all dressing ingredients together. It should taste hot, sour & salty
  2. Mix the herbs, eschalot & sliced squid together
  3. Place the sliced pork on the base of the serving plate then dress the salad generously
  4. Place squid over the crispy pork & garnish with the remaining roasted rice.
